Ingredients for Red Pepper Jelly
- 3 large red peppers
- 2-3 habanero peppers
- 5 cups white sugar
- 2 cups white vinegar
- 1 (3oz) envelope liquid pectin
How to Make Red Pepper Jelly
Remove stems from all the peppers. Cut half of the peppers in half and remove the seeds by scraping them out with a small spoon.
Place the peppers into a food processor and pulse 7 to 8 times to roughly chop peppers. You can chop them as finely as you'd like, we like little chucks in our jelly.
In a large pot over medium-high heat combine the peppers and sugar and vinegar. Bring it to a rolling boil.
Add pectin and return to a rolling boil.
You want to leave it until it reaches a temperature of about 221F (took about 10 minutes here in Nova Scotia). Stirring frequently.
Skim foam from jelly with a large spoon. If you don't skim the foam the pectin will settle to the bottom in an unflavored gelatin.
Transfer to clean jars. Water bath for 10 minutes.
Storing and Preserving Red Pepper Jelly
To properly store and preserve red pepper jelly for a longer shelf life, follow these tips:
- Sterilize jars and lids before use to prevent contamination.
- Fill hot jars with hot red pepper jelly, leaving ¼ inch headspace.
- Wipe jar rims clean and apply lids tightly.
- Process jars in a boiling water bath for the recommended time.
- Allow jars to cool completely before checking seals.
- Store sealed jars in a cool, dark place away from direct sunlight.
- Use within 1 year for best quality.
- Once opened, store in the refrigerator and consume within a few weeks.
