Pretzel Buns in the Bread Machine
I do like the convenience of buying things, like buying hamburger buns instead of making them. But we really like these homemade pretzel buns that we use our bread machine to make. Actually, I say we, but our oldest actually makes them.

Pretzel Buns in the Bread Machine
The great thing about a bread machine is that you don't have to just make bread in it. You can use it to make multiple types of dough in it as well, and they have the perfect conditions to rise in.
Different bread machines have different settings, machines I have had the dough setting is about one hour and 30 minutes.

We always add ingredients to the bread machine in the same order. Warm water, yeast, sugar, butter, flour, and salt.
The dough setting on bread machines is long, about an hour and a half, but that's mixing time plus time to raise. Once that's complete, take it out onto a floured surface, and cut it into 12 equal-sized pieces. Or if you need fewer pieces go for it, and you'll have larger buns.
To get that pretzel crispy on the outside, and soft inside you need to do a quick baking soda bath. It only takes 30 seconds per bun before you put them on a baking sheet and spread them with coarse salt.
Bake them for 12-15 minutes, or until they are golden brown. Allow to cool for 5 minutes or so before cutting them.
We love these buns for anything we use hamburger buns for. Hamburgers, sloppy joes, pulled pork, or roast beef. My kids will eat them the way they are. Blake loves them cut in half with peanut butter on them.
Yes, you can form this dough into actual pretzels too. You would just do that when you divide the dough. But we LOVE these for pretzel buns. Like pulled pork or sloppy joes.
Pretzel Buns in the Bread Machine

Ingredients
Pretzel Dough
- 1 1/2 cups warm water
- 2 1/4 tsp yeast
- 1 tbsp white sugar
- 1 tbsp butter
- 3 3/4 cup all-purpose flour, plus more for hands and work space
- 1 tsp salt
Baking Soda Bath
- 1/2 cup baking soda
- 9 cups water
- course salt for sprinkling
Instructions
- Into your bread machine pan add all the dough ingredients, and add them to the pan in the order listed.
- Use the dough setting. You want the dough to rise for lighter buns.
- Turn the dough out onto a floured surface. Cut into 12 equal-sized pieces of dough and shape into buns. Cover with a towel while you get the baking soda bath ready.
- You are going to bring the water and baking soda to a boil in a large pot.
- Drop 1-2 buns in water for 20-30 seconds. Lift out with a slotted spoon.
- Place your buns on a baking sheet and sprinkle with salt.
- Bake for 12-15 minutes or until they are golden brown.
