How to Make Egg Roll in a Bowl

I'll start by saying I did not use a big enough pan to cook this in. So it looks like an overflowing mess, but I did manage to keep everything contained. Either way, it tastes delicious.

Cook ground beef in a large deep-sided skillet over medium heat until no longer pink.

browned ground beef

Drain grease and return to the stovetop.

Add the onions and minced garlic and cook until the onions are soft and translucent. While the ground beef is cooking I shred my cabbage and carrots in our food processor with a shredding disc. It takes minutes to do everything up instead of by hand.

Add 2 tablespoons oil, carrots, and cabbage to the skillet. Stir to combine. Let cook for about 5 minutes.

In a small separate bowl combine the onion powder, garlic powder, red pepper flakes, ground ginger, soy sauce, and vegetable oil. Pour over the meat and vegetable mixture.

Reduce the heat and continue to cook for about 5 minutes.

Serve it hot. My kids used to add some plum sauce over the top of their bowls of egg roll in a bowl to get that sweetness they are used to from regular eggrolls.

Notes

We use ground beef, but you could use other meats, such as ground pork. You just won't get the same flavor.

Use low-sodium soy sauce for a less salty flavor, I find it quite salty with regular soy sauce but my husband doesn't.

You could use bagged coleslaw mix instead of cabbage to save yourself time and mess, but I like using cabbage.
